Winter Salad w/ Prosecco Vinaigrette
I LOVE salad! My mom gets sick of salad. So, whenever we are all getting together I look through salad recipes to inspire me for something outside of basic. I created this salad after adjusting to everyone's likes/dislikes, and I kid you not, they loved it! I know it's a keeper when I get the seal of approval from both brothers! Per usual, I did not measure when making the actual salad, but I did my best for you all!

Ingredients:

1 - 1 1/2 heads of romaine, chopped

3 pears, chopped

1 cup candied pecans, cut into 1/4's

1 cup dried cranberries

1/2 cup crumbled feta

Vinaigrette

6 Tablespoons Prosecco Vinegar

2 Tablespoons Dijon Mustard

1/2 cup good Olive Oil

1/4 teaspoon salt
-
1/4 teaspoon black pepper

1/4 teaspoon sugar

In a small bowl or mason jar, mix all the vinaigrette ingredients and set aside. In a large bowl, add romaine, pecans, half of the pears and cranberries. Pour the vinaigrette over the salad and toss gently. Top with remaining pears and feta cheese.
