Spanakorizo
Spanakorizo is one of those versatile sides that can be paired with almost any protein - lamb, chicken, fish, beef or pork. Spanakorizo is a traditional Greek dish that combines long grain rice and wilted spinach with a light, lemony taste. I love that the spinach is mixed in with the rice, seems like two sides in one which is always nice to cut down on the dishes!

Ingredients:

2 Tbsp. butter

1/2 of one medium yellow onion, thinly sliced

1 cup converted white rice

2 cups chicken broth/stock

Juice of one lemon

3 hearty handfuls of uncooked, raw spinach

salt, pepper and granulated garlic or garlic powder

Feta cheese, crumbled (optional)

In a large wok style pan, melt butter over medium heat. Add onion and sauté until translucent. Season with salt, pepper and granulated garlic. Add rice. Stir to toast rice. Pour in chicken broth and half of the lemon juice. Reduce heat to low/med-low and bring to a simmer. Stir rice occasionally. Once liquid is almost completely absorbed, add spinach. Stir consistently until spinach is wilted. Stir in remaining lemon juice. Cover and let rest for 5 minutes. Serve and sprinkle with feta cheese if desired.
